The tea’s #1 Grade is the highest classification for white tea before the expensive varieties. Its leaves are plucked from a special varietal tea bush called Narcissus. Instead of steaming or pan-firing, like with green teas, the leaves are naturally-withered and dried in the sun. If additional drying is required, it is a low temperature baking process. Only the special “two leaves and a bud” at the top of a branch are selected for this tea. These leaves must show a very light green, almost grayish color, and be covered with a velvet peach fuzz.
