We're
celebrating Oolong Teas this month. Although Formosa (Taiwan) produces
both green and black teas, it is the semi-fermented oolongs that have
made its reputation. Fine and delicate, with a unique, naturally enticing
taste, these teas are appreciated all over the world. Not withstanding
the famous teas of Formosa, both China and India produce oolongs of exceptional
taste and quality as well.
A good point of reference is a general understanding
of the basic categories of tea and what makes them different. Green and
white teas, for example, are the least processed or oxidized. Black tea
is fully oxidized, and oolong tea is oxidized between 30% and 70%. The
process, also called fermentation or withering, essentially removes the
moisture from the tea leaves to dry and preserve them. The leaves are
rehydrated later by adding hot water.
Formosa Oolong is
a tea with an herbaceous character. It tends toward black from the longer
fermentation time (60% oxidized). The character of this particular long-fired,
semi-fermented oolong is bakey, but somewhat fruity, with a rich amber
liquid. Definitely a special tea to enjoy with special people.
